Ah! yes, we had this all the time at home, with raspberry jam and fresh cream, divine! simple too, 4 eggs, 4 ox caster sugar, 4 oz flour a touch of vanilla. The secret is to whip up room temperature eggs until really stiff, then GENTLY fold in the sieved flour, Do not worry about the little lumps. 180C/350F - 25 mins or so. (Butter and flour the sandwich pans) :)

Hi Gemma, Thank you for your efforts in sharing your recipes and knowledge. Can you give any suggestions for egg replacement for boxed brownie mix. I tried 1/4 cup of yogurt for 1 egg replacement and Brownie came out more chewier than caramel candy with crunchy on edges. Also tried 1 mashed medium banana to replace 2 eggs which is better than yogurt but came sweeter. Do you have any better suggestions for cake like soft brownie..

Ah! this is a difficult one. I understand that there is a powdered sugar called MALITOL which can be used in the same way as regular sugar. You may need to find it online though. :)

Hi Leena, i will add this to my basics list, it is really similar to my cream cheese recipe, but using fresh cream from cows milk. There are a number of recipes online, you would need a thermometer, and the availability of fresh cream, which is often a problem :)
